Mushroom Spinach Sandwich!

I’m so happy to start this blog for sharing my healthy recipes! 🙂

I’m so excited about writing 🙂 Happily waiting to share so many indian yet healthy recipes.

This is my first post so want to share healthy and easy, tasty sandwich.

The stuffing is freezer friendly so you can make ahead and freeze it. So easy right?!

Let’s we go and make the sandwich! 😀

Here is the stuffing.. Is this look wonderful!?

Yes! It is tasty as well.

Ingredients:

Onion – Thinly sliced

Spinach – I used baby spinach

Mushroom – cleaned and chopped lengthwise

Tomato – Puree/ Chopped

Seasoning – Here is the thing, you can use whatever seasoning you want, I used italian seasoning and chilli flakes, You can use oregano, Parsley, Basil or simply chilli powder/Paprika/Taco seasoning.

Salt – To taste

Pepper – To tatse

Oil/ Butter/ Oil Spray

Method:

Chop all your veggies and keep aside. I used yellow onion you can also use red onion. Instead of tomatoes you can use tomato puree I personally like tomato chunks. I used low fat cheese you can use any cheese.

 

 

Heat oil in a wok, add chopped onion and saute for 1 min or until translucent

Add chopped mushroom and saute. If using capsicum add at this stage along with mushroom and give a stir.

Then add chopped tomato/tomato puree along with pepper and salt.

cook until tomato become soft. Add the washed spinach along with intalian seasoning or whatever seasonings you are using.

Don’t overcook the spinach just give a sitr and taste for a salt.

Masala/Stuffing Done!!! 🙂

Then the easy part,

Place the masala/stuffing on bread slice and topped with cheese of your choice.

Toss the sandwiches on both side until brown and cheese melted for 2-3 mins.
