Turmeric detox soup is the only soup I always have in my freezer. This soup is healthy and cleansing, turmeric is soothing and healing, full of powerful antioxidants by drinking this soup you will feel energy boosted 🙂
First we are going to make turmeric broth. This broth is the basic step after that we can ass whatever veggies, noodles, or any meat we want. You can also store the basic broth in refrigerator for 3-4 days and freeze it for 3 months.
I always have turmeric broth in my freezer whenever I want to make soup I simply reheat the broth and add some veggies / beans 🙂
You will definitely love the flavor of turmeric and hearty soup. This time I have added some vegetables and chickpeas in my soup.
But you can also add rice noodles, quinoa, brown rice, white rice, cooked chicken, cooked turkey anything. Make it in your own way and taste it 🙂 😉
Let’s move on to the recipe..
Serve : 5
For making basic turmeric broth :
Onion – 1 chopped finely
Olive oil – 1 -2 teaspoon or spray oil
Ginger – grated 1 tablespoon
Garlic – grated 1 tablespoon or simply use 1-2 tablespoon ginger garlic paste
Turmeric powder – 2 tablespoon
Cumin powder – 1 teaspoon
Coriander powder – 1 teaspoon
Salt – as per taste
Mustard seeds – 1/2 teaspoon (Optional)
Chilli powder / pepper – as per taste
Lemon juice / Lime / apple cider vinegar – 2 – 3 teaspoon
Stock/broth/water – 4 cups or more
Coriander leaves – few chopped
Other ingredients :
Vegetables – Carrot, green beans, zucchini, cauliflower, tomato
Chickpea/black beans/kidney beans/quinoa/brown rice/rice noodles/white rice
Method : Making turmeric broth
Heat a heavy bottom pan, add oil, chopped onion and saute until brown.
Then add ginger garlic. I used ginger garlic paste and saute until raw smell goes.
Add turmeric powder and reduce the flame we don’t want to burn the powder. Give a stir.
After few seconds add the broth/stock/water and give a mix.
Now it’s time to add chilli powder(if using), cumin powder, coriander powder and salt. Actually I added only salt at this stage because I’m making soup with veggies so I added along with vegetables. If you are making only broth add the spice powders at this step.
Let the broth boil well. And add lemon juice/lime/ apple cider vinegar and boil.
Garnish with coriander leaves. Earthy and tasty turmeric broth is ready. After this you can add whatever vegetables you want to eat. Cool completely and refrigerate or freeze.
TURMERIC DETOX SOUP WITH VEGETABLES AND CHICKPEA
After the broth started boiling let it boil for 1 -2 minutes then add carrot, green beans and zucchini.
Then add tomatoes (tomato paste can also be used) , cauliflower.
Add chickpeas and let it boil well.
Mix everything well and let it boil for another 5 – 10 minutes.
After 10 minutes add spice powders turmeric, chilli powder, coriander powder(optional), cumin powder and salt. Let it boil again.
Cook cover for 15-20 minutes on medium/low flame.
After 15 minutes check the soup if the veggies are done. Switch off the flame and sprinkle pepper powder.
Garnish with coriander leaves. Serve hot. Freeze the leftovers for 3 months or store in the refrigerator for 3-4 days.
