Who doesn’t like quick recipe !!! Today I’m going to post very simple, tasty spinach stir fry.
You will not believe how tasty it is. I make this stir to eat along with roti/ chapati/ brown rice/white rice along with pineapple rasam

Serve : 1 – 2
Spinach (Baby spinach) – 2 cups tightly packed or more
Onion – 1/2 cup finely chopped
Garlic – 1 -2 crushed with skin (Don’t discard the skin, crush it with skin)
Oil – 1 tablespoon or oil spray
Mustard seeds – 1 teaspoon
Urad dal – 1 teaspoon (Optional)
Cumin seeds – 1 teaspoon or half
Dry red chilli – 1 or 2 (optional)
Substitute for dry chilli – Green chilli 1 or 2
Carrot – Grated (optional)
Salt and pepper – as per taste
Prepare all your ingredients to make spinach stir fry. Chop onion and keep aside. If possible use shallots for this recipe. I don’t have shallots on that day so used yellow onion. Crush the garlic along with skin in mortar and pestle and keep aside.
Heat wok/kadai add oil or spray oil. Add mustard seeds and let it splutter. Let it splutter completely before adding next ingredients. This is very important.
Add urad dal and let it brown a little. Then add cumin seeds and crackle.
Add crushed garlic along with skin.
Add dry red chilli or green chilli and saute well. Only spice we using in this recipe is chilli so use as per your taste. Don’t let this to burn. Cook everything in medium/low flame. Let it get lightly brown.
Then add chopped onion/shallots and saute until translucent.
Then add spinach and mix everything well.
Add grated carrot if using. Add salt, pepper(optional) and give a stir.
Mix well and sprinkle some water (Very little) Cover and cook for few minutes. Cook until water evaporates.
Very quick and tasty and healthy spinach stir fry is ready 🙂
Served it with white rice and egg masala 🙂
