Quinoa Tawa Pulao/ Pilaf

Pulao is an Indian flavored rice recipe. It is always made with white rice/basmati rice/brown rice. But I want to make it with quinoa. Instead of rice I have used cooked quinoa. Pav bhaji masala powder is must for this recipe. You won’t believe it tasted just like a rice tawa pulao.

‘Tawa’ means a wide flat pan, In north India they use tawa to cook this pulao. It’s a one pot meal 🙂

Let’s move on to the recipe..

Ingredients :

Cooked quinoa – 1/4 cup

Onion – 1/4 chopped finely

Tomato  – 2 tablespoon paste or 1 whole tomato chopped finely

Cauliflower, capsicum, green peas, carrot – 1/2 cup everything chopped finely

Ginger garlic paste – 1 teaspoon or grated

Coriander leaves – for garnish

Optional Ingredients :

Green peas, Mushroom

Method :

Chop all the vegetables and cook the quinoa as per the instruction and keep aside.

Heat pan, spray oil and sprinkle the cumin seeds. Let it crackle but don’t burn.

Then add chopped onion and saute for a minute. Let it become light brown.

Add chopped ginger garlic or ginger garlic paste and mix everything well. Cook until raw smell goes.

Now it’s time to add vegetables. Add chopped cauliflower and carrot. If needed you can also blanch the cauliflower.

Then add chopped capsicum/bell peppers. I used frozen capsicum. Mix everything well.

Add Tomato paste and sprinkle some water don’t add too much. Little water is enough to dilute the tomato paste and cook the vegetables.

Cover and cook until all the water evaporates.

Add Pav bhaji masala( Indian spice mix) You can find this powder in Indian groceries. This spice powder is must for this tawa pulao. You can also use garam masala but you won’t get the actual tawa pulao taste.

Then add the cooked quinoa and mix everything well.

Cook on medium flame until everything mixed well and taste for salt. Garnish with coriander leaves.

Serve it with onion raita or plain yogurt or Boondi raita. I served it with Boondi raita.
