Buffalo Cauliflower Quesadilla

Today I’m going to share super tasty and very quick quesadilla recipe.

I’m bored of normal black bean and corn quesadilla 😦

Want to make something new and different. I always love to make buffalo cauliflower and yogurt dip 🙂 Perfect combo, perfect snack 🙂 😉

Let’s move on to the recipe 🙂

Ingredients:

Flour tortilla or wheat tortilla or tortilla of your choice- 4

Cauliflower – 1 cup small florets

Corn flour or all purpose flour – 1 tablespoon (Just to sprinkle)

Onion – 1/4 cup chopped finely

Capsicum – 1 – 2 tablespoon finely chopped

coriander leaves – to garnish

Buffalo sauce – 1 -2 tablespoon

Any cooked beans – Use black bean/kidney beans/pinto beans/chickpeas 1/4 cup or lesser

oil or spray oil or butter

Low fat cheese of your choice

Ranch or Greek yogurt or sour cream.

Method:

Chop onion, capsicum, coriander leaves and keep aside.

Cut cauliflower and coat it with cornflour, red chilli powder and salt. If needed, sprinkle some pepper powder. And place it on cookie sheet. Broil/grill it until you see brown spots.

Take grilled cauliflower in a bowl and add 1-2 tablespoon of buffalo sauce and coat well. Keep aside.

Heat butter/oil/spray oil in a pan.

Add chopped onion and saute until translucent.

Then add chopped capsicum/bell peppers.

Add cooked beans and saute. I have added some frozen kidney beans.

Then add fresh or frozen corn and mix everything well. Sprinkle some salt and pepper.

Add the cooked buffalo cauliflower and mix everything well. If needed smash the cauliflower so that it will be easy to stuff inside the tortilla.

Finally sprinkle chopped coriander leaves and the masala is done.

Spread butter or spray oil on tawa. Place one tortilla and sprinkle low fat cheese and let it melt a little.

Then place the buffalo cauliflower mixture and sprinkle remaining cheese and close it with another tortilla.

Let the tortilla cook until browned. Flip and cook the other side.

Gooey and spicy tasty cauliflower quesadilla is ready to be served. Cut and serve it with sour cream or ranch or any sauce as you like. I had it with sour cream 🙂

Note:

For the healthier version use oil spray, low fat cheese and whole wheat tortilla.
