Breakfast Omelette

We love to eat egg all day!! 🙂

I always prefer to make egg recipes in the morning for breakfast. It is super filling and healthy. So we named this recipe as breakfast omelette.

My son love to eat egg scramble, french toast, boiled egg for breakfast.

I want to make omelette for breakfast with lots of vegetables. So it is super healthy for whole family.

Best thing in this recipe is we can make the masala ahead and freeze it.

Let’s move on to the recipe..

Ingredients:

Egg – 2

Onion – finely chopped 1/4 cup

Tomato – finely chopped 2 tablespoon

Mixed vegetable – 1/2 cup or 1/4 cup finely chopped

Note: We can use all the vegetables. This time I used frozen vegetables.

Mushroom – 1/4 cup finely chopped

Ginger – 1 teaspoon finely chopped

Coriander leaves – finely chopped

Cumin seeds – 1/2 teaspoon

Turmeric powder – 1/4 teaspoon

Chilli powder – 1/2 teaspoon or needed

Coriander powder – 1/4 teaspoon (Optional)

Cumin powder – 1/4 teaspoon (Optional)

Salt – as needed

Pepper – as needed

Oil/butter

Method:

Prepare all your ingredients and keep aside.

Heat oil in tawa/pan.

When oil is heat add cumin seeds and let it crackle.

Then add finely chopped ginger and saute.

When the raw smell of ginger leaves add finely chopped onion and saute.

When the onion turns translucent add finely chopped mushroom.

We have to saute onion and mushroom really well. The mixture should turn light brown. Then add the mixed vegetables along with tomato.

Mix all the vegetables well.

Saute mixture well until all the water in the vegetables leaves. It will look like dry masala.

Add spice powders turmeric powder,chilli powder, corinader powder(optional) and cumin seeds (optional).

Mix everything well so that masala will get absorbed by veggies. Sprinkle salt and pepper. Keep the masala aside. The basic masala is ready you can freeze this in zip-lock bag for 2 months.

Meanwhile crack the eggs in a bowl.

Whisk the egg well by adding salt and pepper.

Then add the cooked masala into the egg and beat well.

Heat oil/butter/spray oil on tawa and pour the egg mixture.

Cook the omelette on medium flame either closed with lid or not. After few mins flip the omelette.

Don’t overcook the omelette.

Super tasty and healthy breakfast omelette is ready to be served.
